Chewy Chocolate Chip Cookies

These cookies are crunchy on the outside and chewy on the inside.

Ingredients
  

  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 cup Shortening
  • 2 Eggs
  • 1 tsp Salt
  • 1 tsp Vanilla
  • 1 tsp Baking Soda
  • 2 cups All-Purpose Flour
  • 2 cups Chocolate Chips

Instructions
 

  • Preheat your oven to 350°F (190°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl (or the bowl of a stand mixer), cream together the granulated sugar, brown sugar, and shortening until light and fluffy (I usually just stir with a wooden spoon!).
  • Add the eggs one at a time, mixing (or stirring!) well after each addition. Then, stir in the vanilla.
  • In a separate bowl, whisk together the baking soda, salt, and all-purpose flour.
  • Gradually add the dry ingredients to the wet ingredients, mixing (or…. You guessed it! Stirring!) until just combined. Be careful not to overmix.
  • Fold in the chocolate chips until evenly distributed throughout the dough.
  • Using a cookie scoop or tablespoon, drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, just until the bottom edges are golden brown.
  • Remove from the oven and let the cookies cool for 2 minutes on the baking sheet before transferring them to a wire rack to cool completely.

  • Remember, baking times may vary, so keep an eye on the cookies as they bake. Feel free to adjust the recipe to your taste preferences, such as adding nuts or reducing the amount of sugar.

Notes

Tip: The cookie dough can be made ahead of time and frozen in a log or in individual scoops. Freeze them on a baking sheet in a single layer, then transfer to a large zip bag.
